Delatite is a family-owned winery located in North-East Victoria at the base of Mt Buller. The wine is made using biodynamic principles, producing wine as naturally as possible. Grapes are all handpicked, no fining agents are added and 'wild' yeasts naturally found in the vineyard are used for fermentation. This creates an amazing synergy and harmony among all their wines.
The vineyard was originally a project to diversify the family farm in Sassafras, utilising steep, rocky or boggy ground which was otherwise unusable for conventional agriculture. The farm itself has a focus on conservation with large parts being ‘rewilded’ to provide habitats for native species. As for the vineyard itself, the grapes are tended sustainably, with minimal intervention and predominant use of only organic sprays and additions.
